DRY RUBBED PAN FRIED SALMON
A delicious gourmet style dish at a fraction of the cost. A similar dish at a restaurant would cost around RM 30 - 40.
The caramelized brown sugar is just heaven. It creates a slight crunchiness before your bite reaches the flakiness of the salmon. Top it off with a lemon butter sauce and all the flavours just melts in your mouth.

DRY RUB
1. Brown sugar (generous amount)
2. Dried oregano
3. Dried parsley
4. Pepper
5. Salt
6. Lemon zest (grated)

Mix all the ingredients in a bowl.
Rub the mix onto the flesh part of the salmon. Leave the skin part.
There is NO need to marinate over night.

PAN FRY
1. Put some oil into a non stick pan & heat it up with medium heat.
2. Once the oil is heated, fry the skin part first.
3. Don't turn the salmon until you see 1/3 of it change colour. This should take around 3 to 5 minutes, depending on the salmon portion.
4. Turn the salmon. Make sure all the surface is in contact with the pan.

Heat up the lemon in a pan on medium heat. Let it reduce by a 1/3. Then mix it up with the garlic & stir continuously.
Throw in a few knobs of butter once you smell the smell of sauteed garlic. Once all the butter is melted, you're done.

STEAMED BROCCOLI
Steamed is a misnomer. I actually microwaved it.
Pour some olive oil generously over the broccoli. Add some salt & pepper. Mix them all together. Pop the broccoli into the microwave for 2 minutes.
Looks simple but it tastes amazing.
