When mixed herbs salmon is too mainstream

I went to Aeon last weekend and stumbled on some nice looking freshly cut salmon. At RM 4.90 per 100 gram, it wasn't exactly cheap but teringin punya pasal, beli je la. A salmon dish in a restaurant or a hotel may set you back at least RM 20. I'll be making mine at a fraction of the cost. I present to you;



Baked mix herbs salmon with salmon skin and vegetables tempura sounds a bit too formal. So, you can also call it;


Why Indominous Rex salmon? Because this dish is so filling that it could make Indominous Rex (of Jurassic World fame) bergendang gendut tali kecapi, kenyang perut senang hati!. Despite fasting for a whole day, I only managed to finish off half the dish. I had it for sahur and it made me full the whole day.


Ingredients
1. Salmon. Ikut sedap perut nak besar mana.
2. Potatoes.
3. Button mushrooms. Portobello mushrooms would taste better but will cost more.
4. Lemon
5. Carrots
6. Cauliflower 
7. Rosemary
8. Basil
9. Thyme
10. Oregano
11. Paprika
12. Parsley
13. Black pepper
14. Salt
15. Olive oil
16. Honey
17. Thousand island dressing
18. Worcestershire sauce
19. Eggs
20. Oil for frying
21. Tempura flour (tepung for goreng pisang also can)

Estimated cooking time: 30 minutes

Prepare the salmon first. Slice of the skin and put it in a separate container. Just look at that beautiful salmon!


1. Marinate salmon with all the herbs you can get your hands on; rosemary, thyme, basil, oregano and paprika. Mix it together with a dash of salt, Worcestershire sauce and olive oil. Use your clean hands to ensure no surface is left untouched. Rub it all in!

2. Slice the potatoes and button mushroom. Then mix them together in a bowl with a pinch of salt, pepper and a sprinkle of olive oil. 

3. Preheat oven at 210 C.

4. Place the potatoes and mushrooms inside a pan or tray and bake it for 10 minutes.

5. Set the potatoes and mushrooms at the sides (peripheral) of the pan and place the marinated salmon. Bake for another 20 minutes.


6. Prepare the flour and whisk an egg for the tempura. Dip the vegetables and salmon skin into the egg, then flour (in separate containers). Then dip fry them until golden brown.

While waiting for the main dish to be ready, take time to prepare this simple dressing. 
Just mix all these together:
1. 2 tablespoons of honey
2. 2 tablespoons of thousand island dressing
3. 2 tablespoons of lemon juice
4. 4 tablespoons of olive oil
5. Some parsley leaves
6. A pinch of salt and black pepper

You'd be surprised how good it taste. I used lemon juice to replace vinegar while the thousand island dressing replaces mustard. The only fresh ingredients I bought was the salmon while all else were stuff that were laying around in the kitchen. 

After a full 30 minutes, all you have to do is just dig in!
